Hummus

Prep Time : 5 hours (for soaking)                         Cook Time : 20 mins

INGREDIENTS

  • 1 1/2 Cups dried Chickpeas ( Kabuli Chana )
  • 4 tbsp Olive Oil
  • 4 tbsp Lemon Juice
  • 5 tbsp Sesame Seeds ( Til)
  • 2-3 flakes of garlic
  • Pepper & Salt as per taste

METHOD

  1. Soak the chickpeas in 6 cups of water for 5 hrs . Drain the water and keep aside. Add the chickpeas to a cooker and add enough water to cover the chickpeas. Pressure cook them till they are tender. Alternately, you can use tinned chickpeas instead of dried ones.
  2. Roast the Sesame seeds for about a minute and grind it into a powder.
  3. Combine chickpeas, garlic, lemon juice, olive oil, and sesame paste in a food processor and blend until ingredients come together into a thick paste.
  4. With the food processor running, add a little water, about half a tablespoon at a time, until the hummus becomes smooth and creamy. Add salt and pepper, to taste.
  5. Transfer creamy hummus into a bowl . Drizzle with extra-virgin olive oil just before serving and sprinkle with paprika.

Hummus can be served with Vegetable sticks / Pita Bread / Falafel (chickpeas fritters).

INGREDIENTS

To be ground into a smooth paste

  • 1 cup mava (khoya)
  • 1/4 cup cashewnuts (kaju)
  • 4 green chillies, roughly chopped
  • 2 tsp chopped ginger (adrak)
  • 3 cardamoms (elaichi)
  • 2 tbsp water

Other ingredients

  • 4 tbsp ghee
  • 3 cloves (laung / lavang)
  • 3 cardamoms (elaichi)
  • 4 tbsp finely chopped onions
  • salt to taste
  • 1/4 tsp freshly ground black pepper (kalimirch) powder
  • 1/2 cup milk
  • 2 cups paneer (cottagte cheese) cubes

METHOD :

  1. Heat the ghee in a kadhai, add the cloves, cardamoms and onions and sauté for 2 to 3 minutes till the onions turn translucent.
  2. Add the prepared paste and sauté for another 2 to 3 minutes.
  3. Add the salt, pepper, milk and ½ cup of water and bring to boil.
  4. Add the paneer and simmer for 2 minutes.
  5. The dish is ready to serve with your choice of bread.
