Gajar ka Haluwa ~ Carrot Sweetdish

  • Carrots – 8 long (finely shredded)
  • Clarified Butter/Ghee – 1 tbsp
  • Milk – 2 cups
  • Sugar – 1 cup/or more according to preference
  • Mixed nuts (almonds, cashews, pistachios, raisins) – handful chopped (for garnish)
  • Cardamom powder/Elaichi powder – 1.5 tsp


  1. Heat a deep pan/skillet. Add a tablespoon of clarified butter/ghee and let it melt. Add the shredded carrot and saute (approx 15 mins.) on a low flame until the carrot changes color to caramelized color/light brown. Take care not to burn the carrot. The raw smell should also disappear by now.
  2. Add sugar and mix well.
  3. Add Milk and allow to boil until the mixture begins to thicken and carrot turns tender. Mix thoroughly until Milk evaporates completely.
  4. Remove from stove. Garnish with mixed nuts and sprinkle the cardamom powder ( if needed).
  5. Serve Hot with Vanilla Ice-cream.

GrandMa’s Papaya Hulwa

Prep Time : 15 mins                                                                         Cook Time : 25 mins


  • 2 Kg Ripe Papaya
  • 5 Green Cardamom ( the seeds should be removed and grind-ed into powder )
  • 1/4 cup Raisins (soak in water for 10-15 mins to soften it )
  • 1/2 cup Sugar
  • 1/3 cup Oil
  • 2 tsp Ghee


  1. Peel the papaya and cut into small cubes. Put the pieces in a pan with 1 cup water and cook it for 20 mins till the papaya become soft. The amount of water and time can be adjusted based on the ripeness of the papaya. The idea is to get it soft so that you can mash it up.
  2. When the papaya gets soft enough, mash it properly, add the sugar and cook for couple of minutes till the water dries up.
  3. Add Oil, cardamom powder, raisins and cook for 2-3 mins.
  4. Add the Ghee cook for about 2 mins and serve hot.
  5. You an also add slivers of almonds on top of the Hulwa before serving 🙂 ! Enjoy
